Baked Shrimp and Uni


Here is a recipe I like to use when you have access to live shrimp.  It's easy and good.  Although, if you are on cholesterol meds, you may need to double up on them if you eat this. 

Unfortunately the pictures did not come out as well as the dish.

Ingredients:
Whole live shrimp
Uni
salt
Mayo
In a toaster oven preheat to the highest setting.  First cut all the legs and antennae off with a pair of scissors.  Then from the underside cut through the first quarter of the head all the way through and then cut all the way down to the tail do not cut the rest through the rest of the shell.  Crack open so that it lays flat.  Also crack the tips of the tail backward this will prevent the shrimp from curling when it shrinks from cooking.  Add salt and place on a foil lined tray and place in the oven.
When the meat starts to cook.  Add mayo, I like Japanese Mayo, Kewpie brand.
Then place the uni on top and put back in the oven.  Cook only briefly until the mayo and shell begin to brown.  Do not overcook the shrimp or uni.  You don't want either one of them dried out.
Goes great with Sashimi and a bowl of rice.
And Yamaimo and Maguro (mountain yam and tuna).
Which, if you never had it, has a snot like appearance and texture. Mmmmm.
